Purple Salsify, Tragopogon porrifolius
Purple Salsify is a common wildflower introduced to North America from its native Mediterranean Europe. It is also called Common Salsify or Oyster Plant, the latter being because its roots taste like oysters.

This stunning plant grows to 2 feet (.6 m) tall, with a grass-like leaves and unbranched stem. It is a member of the aster family which includes sunflowers and daisies
